My yoga teacher told us on the very first day of Teacher Training that, "please try plant based diet during next 5 weeks."  I was thinking that I will eat healthy and do some portion control for next 5 weeks, but I didn't prepared for PLANT BASED DIET!!!  NO meat? NO fish? and dairy is kind of okay.. kind of..I don't like milk and cheese, but egg is hard to give up.
I am not a big meat eater, too, but I do love fish.
Guam is not the best place to do plant based diet since veggie are expensive and not so fresh.  So without meat and fish is a pain in the neck:((
It's not super strict like I can never eat any meat or someone checks what I eat everyday.
However, this is a good opportunity to try plant based diet. I will give it a try.
Since I don't want to just eat salad, I need to prepare some veggie dishes to enjoy.
So, I made a lot of "Kinpira gobo" (chopped burdock and carrot cooked in soy sauce and sugar) I love this dish that I can eat it everyday. When I came back from Japan, I brought burdocks from Japan. Sometimes, my friend brought me them, too.  I need to cook more veggie dishes and keep them in the fridge, so this diet will be easier for me.
This is only a first week, and I didn't strictly follow plant based diet.(had some chicken stock soup, or order dish with meat but not ate an actual meat)
Next week, I will try a bit harder. We'll see...

    1. It was haaaaaard!! I think Guam is very difficult place to practice Vegetarian.
But some people do, and I admire them for their commitment:)
I am able to do so if I live in the States, or maybe this is just an excuse..
